Strictly following the seasonal products calendar! January – time for duck and goose, lamb, roots and northern fish. Brand-chief Vladimir Mukhin and chief Ilia Zakharov chose the best to make the real winter dishes out of this all. Try our dishes with farm duck – soft breast in a salad with turnips, beets and pickled pomelo or rosy baked leg with appetizing aroma of thyme and garlic and thick cherry sauce.
For those who prefer goose – there's unusual ravioli with goose meat and goat cheese with sweet pumpkin sauce mixed with pieces of fragrant Abkhazian basturma.
The fish we have in this new season is also from Russian north. Red salmon is brought from Murmansk. This fish is slightly smoked, water-boiled and served with fennel and mustard sauce. Halibut, also from Murmansk, is grilled and served with tagliolini made of zucchini and green beans, slightly covered with cranberry powder. For Murmansk codfish our chief has prepared two marinades at once: first - milk with sea salt, then honey with chili pepper . Why two at once? Taste it, and you’ll know the answer!
